FRIED POTATOES WITH ANCHOVIES 
Peel the potatoes.  Cut a  sliver off the bottom of them so they can stand up.  Hollow out the inside.   Whip the butter and anchovy paste together with a fork.  Preheat the frying oil to 375F.  Fry the potatoes until golden.  Drain them on paper towels and fill them with the anchovy butter. 

 

Ingredients: 
30 small new potatoes 
3/4 cup unsalted butter, softened 
1 tube of anchovy paste 
deep frying oil

 15 Mins 
Cooking Time: 
 20 Mins 

Tip: 
 These potatoes can be served as an appetizer or with grilled or roast meat
