Peel the potatoes. Cut a sliver off
the bottom of them so they can stand up. Hollow out the inside.
Whip the butter and anchovy paste together with a fork. Preheat the
frying oil to 375F. Fry the potatoes until golden. Drain them
on paper towels and fill them with the anchovy butter.
